4 slices mozzarella cheese
1 cup packed baby spinach leaves
1/2 pound (about 16 slices) Patrick Cudahy? Pepperoni
4 thin slices red onion, separated into rings
Heat a panini maker or have a ridged grill or nonstick skillet ready. Spread pesto evenly over one side of each slice bread. Layer salami, cheese, spinach, pepperoni and onion rings over 4 slices of the bread. Close sandwiches with remaining bread pesto sides down. Brush olive oil lightly over both sides of sandwiches. Cook in panini maker 3 to 4 minutes or until golden brown and heated through. Or, cook 3 to 4 minutes per side in a ridged grill pan or nonstick skillet over medium heat.
